I put a good scattering of spring onions all over the plate.
You need something sharp to contrast the richness.

Right. I went to lidl today. I bought 3 off 227g packs of "deluxe" 36 day dry matured rump steak at 3.17 per pack. Well worth rummaging for thicker bits.
Whatever Pinno might tell you, take out of the fridge and packaging for an hour before cooking, then dry with kitchen paper, smear with neutral oil, season well with salt and pepper then fry for a minute per side in a very hot dry pan (smoking). Then chuck in some butter, allow to foam and turn every 15 seconds for another 60 to 90 seconds. Take out and rest for 5 to 10 mins while you cook some quartered mushrooms with garlic in the same pan. Finish the mushrooms with lemon juice and chopped parsley. Slice the steak with a sharp knife on the bias, pour over the mushroomy/buttery garnish. Lidl also had big bunches of british asparagus for 2 quid. So we also had this.
If you have a lidl with this 36 day matured rump at this price, buy it. Utter bargain.
The store I was in had some bottles of Julienas (a beaujolais cru) at 6.99. Also worth a punt if you like low tannin fruity red (I seem to recall Pinno being a fan). 30 mins in the fridge door.0 -

I remember an exceptional Macon Rouge - same valley as Beaujolais but far better than the stuff that came out of there during that bonkers 80's fad of buying Beaujolais Nouveau.

Chicken breasts marinaded in balsamic vinegar, olive oil, smoked paprika and parsley, salt and pepper.
Pan fried - put a lid on it to cook the middle after browning the breast and then slice through the middle enough to accommodate some thick slices of Gruyere cheese.
Place in gratin dish with a generous spoonful of Red Pesto.
Place in oven for 15 to 20 mins @ 175 deg c.
Served up with a fresh salad of watercress, rocket, spinach and iceberg - sprinkle of fresh chives.
Plus baby potatoes with butter and lashings of black pepper.

Ah, nowt to see. Here was me looking for inspiration. Back to plan A, a risotto using whatever I can find in t'fridge, prob pancetta, red pepper, red onion, celery, chilli plus whatever else involved. Get off t'web and into t'kitchen...0
