    Guinness, home made Curry (that's been in the freezer for 4 weeks) and home made Naan bread. There is nothing quite like the smell of the Naan bread (keeping warm in the oven) from the Black Onion seeds and Yoghurt.

    You should have said sooner.

    I always keep a bag of curry leaves in the freezer after a visit to the local Asian supermarket for making authentic curries. They keep for ages alongside the small green, hot as f@ck chillis I buy in abundance.

    Yeah.

    How did you get on?

    It was easy, you know. Whole milk in a casserole dish, bring to the boil and turn off the heat as soon as it does so.

    Then add lemon juice and stir so that the milk curdles. Let it sit for 5/10mins so it can cool. Strain/rinse the curds through a muslin cloth and then squeeze out any remaining liquid by pinching up the muslin into a ball with the curds inside. Then give everything another press on a chopping board to get any remnants of liquid out.

    Then transfer to a plate and put some weight on top (a few more plates) and put everything in the fridge for an hour or two.
