    I have 21 year old global chefs knife and a veg knife. Wedding presents from my first marriage. Also a wmf chefs knife which is heavier. Also an ancient carbon steel serrated flexible thing for bread. The trick is to keep the buggers sharp. Some others I don't use.

    Fällkniven DC521 bench stone. It'll even get a good edge on the global knives. It's not perfect, you could strop to a mirror finish with leather and a compound, but for cooking? Not worth it.

    Like my bike, I sometimes think of getting something "better", but I'm happy with what I have.

    I have a set of Smithfield's. They're pretty standard but work.
    I had a set of Sabatier and they got nicked...

    MF’s knife is a Santoku (?) type I think.

    Have a set of old Mundial knives and newer Global ones. Take them in once every now and then for professional re-edging as the home sharpening tends to eventually wreck it under my clumsy attempts.

    Also an old butcher’s cleaver in the cupboard, kept mainly in case of burglary intruders.

    I've got a few Sabatiers from the 50s that I got from my father when he started cheffing in Switzerland post war. Still mega after all these years.

    Apart from that, Padernos that we got on a deal - nothing to blow your socks off but they hold an edge well, cut v nicely, weigh lots, feel nice.

    I use a sharpening steel on my knives, never gets them as sharp as new but enough so they don’t slip.

    Minor bug bear about tv chefs sharpening knives, Ramsay etc, when you sharpen a knife it leaves a metal residue on the blade which I wipe off but the tv guys don’t bother. Metal in my food, no thanks. Interesting? 😃 No? Fine, I’ll go sit with hop in the corner 😔

    Lettuce salad. Round lettuce, sour cream, sugar, salt. Not exactly sure how she makes it but tastes good.

    a couple of scoops of pesto in a dry non stick frying pan once its hot crack your eggs in and fry as normal, the oils in the pesto are all you need.

    I'm with you on that, in fact i used rocket pesto its much nicer IMO

    Made myself a rather strange tray roast with what i had in the fridge and a cod filet, it tasted fine but lacked any umph, i forgot to add garlic but roasted radishes are a nice addition.

    As a rule, I rarely add garlic to white fish. I think it masks the flavour.
    Except for fish curry with Fenugreek, Tried it?
