    A main containing celeriac mash was the only dish I’ve ever sent back at a restaurant. Certainly couldn’t eat a steak of it!

    The spice had an argument with my hiatus hernia going down but other than that relatively unscathed 👍

    Coconut chicken noodles for us. 3 or 4 of those big banana shallots, peeled, thumb size bit of ginger, peeled, 4 or 5 garlic cloves,
    peeled , chilli (to taste) a couple of inches of fresh turmeric root (or teaspoon or so of powder). Whizz up to a nice paste. Fry hard in veg oil until aromatic (don't burn), chuck in some chunked chicken thigh fillets, 2 or 3 per person, cook in the paste for 3 or 4 mins. Chuck in a can of coconut milk. Fish sauce to taste (tablespoon maybe). Simmer for 15 mins, add a bit of water if it looks too dry, should be a soupy noodle dish. Add cooked egg noodles. Put in bowls. Have things on the table for people to garnish as they wish: coriander (unless you're sungod), those crisp fried shallots from a pot, raw shallots if you want, halved boiled eggs, more chopped chilli, lime wedges and more fish sauce.

    Prep nice and easy because you whizz it. 20 to 25 mins cooking time, and you can even buy pre-cooked noodles to make it even easier. Chop all the garnishes while it's cooking.

    A little taste of SE Asia in 30‐35 mins. The paste etc serves 4, you can scale up or down.
