He's very cool.
Even now.
Apparently because they didn't have access to endless water supplies when he was racing he trained himself to being very sparing with water. He still barely touches water when he rides. Even said that at the time they thought 'driest was fastest', given it didn't weigh them down....0 -

Makes sense.
I've noticed that since I've started commuting in London, where I don't carry water, I drink a lot less on club runs.
Usually a full bottle will suffice for a good 100km. Bit more if it's really hot, but I'll just get a coca cola instead of a coffee at the cake stop.
And before a smartarse says something about coffee dehydrating you...

Fact: Only if you overdo it. While caffeine is dehydrating, the water in coffee (and tea, for that matter) more than makes up for the effects, ultimately leaving you more hydrated than you were, pre-java

OK, this is going to be a bit vague... I recall seeing an old picture of a rider (dutch?) out training with a motor pacer. The motorbike rider was wearing one of those baby carriers containing the racer's young son. The picture was in Pro Cycling or more likely Cycle Sport back in (probably) April/May/June 2013.
Can someone remind me of the rider's name, or better still post a link to the image?
