Tonight was prawn, chickpea, spinach and other stuff curry, with dhal (inc cauliflower florets) and black rice with a dollop of Geeta's mango chutney on the side
Tasty and plenty left for another night.

My OH used to do a vegan Thai curry when she was into those 'Ella' recipe books. Was actually really nice, which as a carnivore surprised me!

I was about to ask the same. I’ve not had much luck making tofu (extra firm) tasty. I’ve only ever tried marinading it in cornflour with soy sauce or teriyaki. It’s still ok in a stir-fry, just a bit bland.

Same here, can’t seem to replicate the spicy Korean takeaway tofu at home. Either too firm, too soft or no taste.

Piece of pish really. Sainsbury's do a bag of stir fry veg. Pick up a sachet of sweet chilli sauce alongside. Sainsbury's Organic firm Tofu. Extras are sliced red chilli, sliced garlic, more soy sauce, lemon juice, salt, pepper, some Jerk seasoning (only a little).
The trick is to squash the tofu down for about 30-45 mins between kitchen roll changing frequently. You need to get as much water out as possible. Cube into inches. Then marinade the tofu in the above mixture for about an hour in the fridge mixing occasionally.
Fry the Tofu in a very hot wok with a bit too much sunflower oil till the cubes are slightly brown with crispy edges. Remove, then fry veg and add tofu back in for a minute. Serve with noodles of choice.
Best thing about it is that my wife does this. I cook almost everything else, that's why I like this so much. Gives me a night off.

You didn't freeze the leftovers from last night to 'mature'?
