It's mostly lack of evidence. There was an excellent article in the Guardian about this a few years ago. In the [70s] someone did some research which demonstrated that countries with a high fat diet had high levels of heart disease. It was also discovered that people dying of heart disease had really fatty arteries. All this gave rise to the public information campaigns that fat is bad for you, so skimmed milk etc. were promoted.bompington said:

However, it turns out that the initial research intentionally excluded France which has a high fat diet, but much lower incidence of heart disease, and that the initial research was pretty poor all things considered.
Many dieticians having spent decades building theories on the basis that fat is bad, weren't so keen to accept this, but have been unable to provide any proof to support their theories.
There is evidence that since fat consumption declined, consumption of carbs has increased. There is also a school of thought that fat is more satiating and hence people are less likely to get fat eating fat.
So the jury is out, and all the public information has now pivoted towards sugar being bad, because "empty calories" etc.

But if you preach less meat, it's easier to get them onto eating more healthily, and then you get the added benefit of a reduction in meat consumption.
I would say I'm very keen on meat but then I look at what weight I'm eating a day vs others and i'm shocked at how much people eat.
Then again, that's probably why i'm a BMI of 19.5
