    Jeez the food we had back in the early 90s was bloody amazing, in the canteen it just good very well cooked food in huge portions, at the mess is was top restaurant quality and the NAFFI much like a fast food or motorway services type junk foods and snack, oh and beer B)

    yup - exactly the same - I was attached to the US at the time.

    They take all their food everywhere they go so we/they get the same slop anywhere in the world they are.

    Its all boil in the bag and tastes like muck.

    Since when? I had lunch in MOD HQ just before lockdown 1 and it looked nothing like that, mind you it wasn’t the same standard as during my service years.

    Basically, its Sodexo contracts using Sodexo staff. Budget per person is tiny, staff don't care, company reaps the profits.

    Fridays, Saturdays and bank holidays, when the sh1t was hitting the fan at Oarton's, my job was up front - putting dishes together, adding garnishes, arranging everything on the plates (underneath heat lamps), chefs bawling at me, me bawling at waiting staff, running around doing anything that needed done.
    Including putting things in ovens, glazing crème brûlée etc etc.
    If I had made a mess like that, i'd get a rollocking - so it's your turn.

    One thing that ticks me off is watery potato topping on cottage / shepherd's pies. Didn't grow my own potatoes last year wot wiv life stuff going on so have to buy from the s'markets. Tediously repetitively boringly poor and offputting. Maris Piper, 'All round', others... Any pointers as to getting good quality topping type tatties?

    Maris Piper or Roosters. But supermarkets are a shady bunch that can sell you old stock or disguise a lesser potato as one of the above. Hit and miss.

    Kestrel, early, if can still get hold
    Charlotte, 2nd early/ early main, tasty 'new' potato
    Setanta, perfect texture for baking, roasting etc, not so good for boiled spuds.
    Cara, good all rounder, later main

    Topping on any pie for me now will always be sweet potato, potato and carrot mash, skins left on. Yum!
