Stage 7: Nuits-Saint-Georges – Gevrey-Chambertin, 25.3km, ITT
July 5th.
First Rider 12-05, Last Rider 16-00BST.
The first time-trial of the race comes in wine country, but no champagne will be sprayed yet (that’s Stage 9). It’s set to be flat apart from a 1.6km, 6.1% average kicker near the end. The individual time trial between Nuits-Saint-Georges and Gevrey-Chambertin is set on the Tour de France's seventh day of action. The 25,3 kilometres long route takes in an elevation gain of 300 metres. The Tour de France never before visited Gevrey-Chambertin, while Nuits-Saint-Georges was a finishing venue in 2017.

NUITS-SAINT-GEORGES AND CYCLING
In 2017, when the Tour de France came to Nuits-Saint-Georges for the first time, it was Marcel Kittel who won the bunch sprint, the third of his five victories in the edition. The commune has also hosted two stages of Paris-Nice, won by two world-class sprinters: Freddy Maertens in 1977 and Matthew Goss in 2011.
Specialities: Burgundy wines (32 estates, 140 winegrowers), crémants, liqueurs, red fruit, marbled ham, Bush de Nuits (Belgian beer matured in wooden tuns that have contained Burgundy from Nuits-Saint-Georges).
Boeuf Bourguignon
Beef bourguignon is a rich and complex stew originating from the region of Burgundy in France. The star of the dish is a robust red Burgundy wine, which is used to soften and tenderize tough cuts of Charolais beef, along with savory additions such as carrots, onions, garlic, thyme, and mushrooms. The ingredients are simmered for a long time until the meat is completely soft and succulent, and all the juices have blended into a hearty, dark sauce.
Burgundy Wine Festival
Held in the prestigious setting of the Maison de Nuits-Saint-Georges, the "Fête du Vin Bourru" welcomes over 5,000 visitors every October, who come to taste the year's Vin Bourru, the grape juice pressed in front of them.

GEVREY-CHAMBERTIN AND CYCLING
Gevrey-Chambertin has never before hosted the Tour de France, but this famous Burgundy appellation is not the first Côte d'Or wine town to raise its glass to the world's greatest cycling race. It was preceded by Nuits-Saint-Georges in 2017, Santenay in 1988 and Pouilly-en-Auxois in 1975.
Gevrey-Chambertin vineyard
The Gevrey-Chambertin vineyard is one of the most prestigious in Burgundy, and indeed in France and the world, with 310 hectares of Pinot Noir grapes vinified into red wine. The Gevrey-Chambertin vineyard alone produces 9 of Burgundy's 33 AOC grands crus. The power of Gevrey-Chambertin wines goes well with full-bodied, elaborate cuisine: grilled red meat, leg of mutton, beef bourguignon, rabbit stew, coq au vin, coq au Chambertin, strong cheeses, Epoisses, etc. (Burgundian cuisine).
Ami du Chambertin
Ami du Chambertin is a French cheese produced in Gevrey-Chambertin in Burgundy. It's made from raw cow's milk and has a smooth, soft, and creamy texture underneath its rind, which is washed in Marc de Bourgogne brandy. The flavors are buttery, salty, sweet, milky, vibrant, and strong with hints of bacon and spices, while the aroma gets quite pungent as the cheese matures.

Nuits Saint Georges.
This Burgundy village has given its name to its wines, but also to the prestigious hillside on which it is produced. Nuits-Saint-Georges is located in the heart of the Côte de Nuits, a region of the Burgundy vineyards located between Dijon and Beaune and from which come the "pinot noir" wines considered to be the best in France, if not the world. The town of Nuits-Saint-Georges is located in the northern part of the Burgundy vineyard, in the Côte d'Or. It has given its name to the wine-growing sub-region of the Côte de Nuits, where the renowned AOCs of Vosne-Romanée, Chambolle-Musigny and Gevrey-Chambertin are also located. The AOC Nuits-Saint-Georges is a Village appellation, produced in the town of Nuits and in Premeaux-Prissey. Of the 300 hectares of the appellation, about 150 hectares are classified as Premier Cru.
Chambolle-Musigny
Chambolle-Musigny is a French appellation located in Burgundy, more precisely in Côte de Nuits (Côte d'Or) wine region. The whole appellation includes twenty-five Premier Cru designations, as well as Musigny and Bonnes Mares as two Grand Cru vineyards with separate appellations. The wines produced in the region are based on Pinot Noir and are generally regarded as one of the best expression of this renowned grape. Delicate and elegant Chambolle-Musigny wines typically display aromas of red fruit and violets that with age may develop into more complex notes of ripe fruit, truffles, and underbrush.
Because of its smooth and velvety texture, these wines perfectly pair with game meat, roasted lamb, and beef, as well as soft-center cheese varieties such as Brillat-Savarin or Reblochon.
Morey-Saint-Denis rouge.
Morey-Saint-Denis is a French appellation located in Côte de Nuits (Côte-d’Or) region of Burgundy. The appellation mostly produces red wines made from Pinot Noir, while only five percent of production is focused on white wines. Red Morey-Saint-Denis wines are typically ruby red with purple highlights. They usually display primary aromas of red and black fruits, which often open to nuances of violets, fruit brandy, or macerated fruit, while those aged over fifteen years may develop aromas of leather, truffles, and undergrowth. These wines are a perfect match to beef and game, as well as soft-centered cheeses.
Gevrey-Chambertin
Gevrey-Chambertin is one of the eight key villages of the Côte de Nuits of Burgundy, France. Each village produces red wine exclusively from the Pinot Noir grape. Their fine tannins make them a perfect match to hearty dishes such as stews, grilled or roasted beef or lamb, terrines, game meat, and strong-flavored cheese varieties.
Chambertin
Chambertin is a French appellation and a Grand Cru vineyard located in Burgundy, more precisely in the Côte de Nuits (Côte d'Or) wine region. The designation produces red wines that are mostly varietal and based on Pinot Noir. They typically display complex aromas of red and dark fruit that are often complemented by smoky notes of spices and licorice, as well as subtle herbal and floral nuances. Often praised as one of the best expressions of Burgundy region, these full-bodied and powerful red wines are a perfect match to game, but they can also work well with lamb, poultry, or beef, preferably served in rich wine-infused sauces.

Interested to see how Jonas gets on today. So far he shown that he still has some explosive pace when following Pog's attacks but the Galibier suggested he could hold the effort for more than a few minutes. Today will need a lower but more sustained effort, I suspect that's the sort of thing that gets affected more by a long break from training.

Given that Visma-Lease-a-Bike believe that the best way to beat Pogacar is to wear him down by making the race hard, it's increasingly difficult to see how they do that this season when most of their team is well below the standards of last year. Yesterday's cross wind shenanighans is looking increasingly like a half hearted attempt to do something.
