Actually I think Rufus Wainright cover is better than Buckely`s once you put aside Buckleys inherent tragedy.
But Sweet Jane is the only cover Ive heard which really adds an entire other element to the original. Even Nirvanas "THe man who sold the world" cover of the Bowie song is just an homage, not a new idea.

Live and Let Die - Guns n Roses. Got the grittiness of Axl Rose's vocals plus the superb shredding of Slash that give it the edge of the Wings original.
Green Manalishi - Judas Priest. A screaming Rob Halford and KK Downing on guitar gives this Fleetwood Mac track a metal edge.
I Love Rock n Roll - Joan Jett and the Blackhearts. I didn't even realise this was a cover (original by The Arrows). Classic track. Actually saw it performed live when she supported Queen at the MK Bowl.

The Stereophonics - The First Time Ever I Saw Your Face
or Matt Cardle's version
are far superior to the original by Peggy Seeger, and also better than the more famous cover by Roberta Flack to which they are far more similar.
Eva Cassidy's cover of Fields of Gold is much better than Sting's original. Far more emotion and the tempo seems to fit the lyrics better.
