Stage 21: Roma (EUR) – Roma, 125.0km

Start Time: 14-30BST.
The final stage is divided into two parts: the first is the peloton’s outing to Lido di Castel Fusano on the Tyrrhenian Sea. It’s 16 kilometres one way and another 16 kilometres back before the stage enters its second and final part, the finishing circuit (8 laps) of 9.5 kilometres, which very much resembles last year’s lap through the eternal city. The circuit runs entirely along city streets (wide and sometimes with some traffic dividers) and alternates between short undulations and long straights linked by sometimes challenging bends. The road surface is mainly asphalt with a few short, cobbled sections (so-called sanpietrini).

The last kilometres feature some bends and a short climb. The final 350m straight is made of cobblestones and is 9m wide.

Once they grew up, the twins decided to found a city: to determine who should govern, they entrusted themselves to the will of the gods through the flight of augural birds. From the Aventine Hill, Remus saw six vultures, while Romulus, from the Palatine, sighted twelve, becoming the first King of Rome in 753 BC. From the Palatine Hill, the city would extend over the seven hills we all know: Palatine, Aventine, Campidoglio, Quirinale, Viminale, Esquilino and Celio.

Saltimbocca alla Romana
This dish is one of the most traditional Roman dishes, and it is deeply rooted in regional cuisine. The name of this Italian classic comes from salti in bocca, meaning it jumps in the mouth, which is exactly what the flavors of saltimbocca do. The dish consists of tender, pan-fred veal cutlets that are wrapped in Italian prosciutto, flavored with fresh sage, then sautéed in white wine..
Supplì
Widely considered to be one of Rome's best street foods, these breaded, deep-fried rice croquettes are in fact quite similar to the Sicilian arancini, but unlike which, Roman supplì are traditionally filled with mozzarella, and the rice is pre-simmered in a tomato-based meat sauce.
