I have been doing spin classes over winter using just trainers.
The spin bikes at my club use pedals with toe clips and straps, but do not have SPD'd on the back.
Can I use MTB shoes without cleats (I haven't got any shoes yet so would just mean not installing cleats) for these type of pedals?

Before I started using cleats I wore SPD shoes on the road without the cleats attached, on flat pedals with toe clips. I can see no reason why you can't do the same in spinning classes.0

Getting treaded shoes into toe cages can be a right pain in the ar5e. Just use trainers - there will be no benefit in using SPD shoes in that way..0 -

Once into the cage I don't suppose they'll come out again and I thought having a much stiffer shoe than a trainer would be a benefit maybe.0 -

That's assuming the cage can accommodate the SPD shoe (and thick treaded sole) in the first place. The stiffness benefit would be very marginal, in any case. At the end of the day, it's a spinning class...0 -
I know some spinning bikes I have seen have SPD mounts on them. Might be worth a look round to another GYM to see if they have this option if you really want it.0
