Golden Cheetah - videos - ant+ - training sessions - Help!

Hi there,
I need some help setting up Golden Cheetah to make it do what I want it to do...
Basically what I want is to make up my own training sessions based on heart rate zones/cadence that will show up live on Golden Cheetah. And in the background I want it to also show some videos. My plan is to record various stage races this season and while watching the highlights I would like to be also riding my bike.
My setup -
Rollers & bike & laptop
ant+ cadence and speed sensors
ant+ HRM
ant+ usb dongle
What I can already make work -
I can get Golden Cheetah to show my live speed, cadence and heart rate. I can also get it to play a video.
What I can't work out -
How to make a training session that is based on heart rate and cadence. Is this possible with ERG files (or anything else)? The GC "workout wizard" seems to only work on power targets not HR and cadence and all the examples I can find seem to do the same.
