Increase mileage or short workouts?

Just wondering what's the best way to go about becoming a stronger faster cyclists? I have been riding for nearly 3 years now and I am stuck at around 27-28kph over any distance or elevations. I have started getting u early to get 2 hour rides in before work as my commute is only 15k. I will be doing that 3 days per week and up early Sat for a 4 hour cycle and Sunday a shortish recovery one. Or should I be doing shorter sessions but faster?

Variety always helps. If you just do the same thing all the time, you'll get to the point where you won't see much improvement.
Most info I have read about recovery rides says 2 hours at 60-65%, which I find very hard to do.
I'd do some interval rides, some hill climbing, some hour/2 hour rides at 80-85%.0 -
