Sugar

Since cutting down the amount of sugar in drinks etc I became aware that sliced bread was tasting sweeter. I started looking at the the sugar content shown on the bread wrappers and saw that the sugar content varied from brand to brand, Anybody else noticed this?

Not only does white bread have a fairly large amount of sugar in it, but the starch it contains is so simple that it is broken down to sugars by your saliva. Chew some white bread for a while and it tastes like eating sweets ;)

  • I make my own bread (in a breadmaker) and can therefore control the amount of sugar in the loaf.

The more sugar the harder the crust too.

1 loaf contains about 1 tablespoon of sugar and often I will reduce this even further.
