I like the look of the Canyon but cant get this as its not available through the cycle to work scheme.

How does the rival compare to the ultegra?

The effective top tube length on this is quite a bit longer than the Pro Carbon in medium so you could feel too stretched out on it. Check the web site for geometry details.
Rival and Ultegra are both good group sets, I prefer the shifting on the SRAM shifters but really it is just a matter of which suits you best.
