Powertap General advice required

I haven't yet done too much RnD as to whether Powermeters are the way forward for me. I'm in the proces of getting some coaching with a view to road racing next season, so it will be something to discuss. So just have a few questions to throw in for some user feedback.
I'm looking at the Powertap route as financially it's a cheaper option to begin with, maybe? I've seen a site where I could hire one, this would at least give me an idea first.
I'd be using a training wheel to begin with. Can I then buy a 2nd hub and build to a race wheel but still use the same stem mounted unit? Whether that is the new Joule or a Garmin. Or does the computer only register with the first hub unit?
Any preferences on using Cyclop's own Joule unit or a Garmin. I am thinking the Mapping on the Garmin would be useful, at least for new route finding. But wonder if there are Pros & Cons to moving away from Cyclop's own unit.
What Software are people using? I know of WKO & Training Peaks & see Cyclops have their own too...I'm mainly Mac based but Training Peaks is on-line right? I have PC access to.
Any pointers appreciated. Thanks!

The cost is almost entirely in the hub so getting two wheels built up would be an expensive way to do things. I'm no expert but I should think pairing two wheels to one head unit is fine. I think most people prefer to use a Garmin unit.0

Yeah! I know that will look expensive, yet they all seem to work out similar on price. Crank based systems starting around £1500 which could be swappable between bikes with same BB (I have a feeling mine won't be). SRM is into the 2k+ mark & a race wheel could be 1-2k dependant on the make...

Garmin 500, for example, can be easily configured to work with up to 3 different ANT+ power units, so 2 PowerTap hubs is fine.0
