My Pub bike was on Canti's and now runs full size V's, its flat barred but running Shimano Canti brake levers, as long as the wheels are true and you run the pads very close they work fine, the level travel is a little long but the brake force is awesome as the leverage 'error' works in your favour, you just get used to not heaving on the levers unless you like a facefull of tarmac or flatting the tyres (depending on which end you are abusing!)

Just an update on this because I know it's a fairly common issue. I fitted the V-Brakes a few weeks ago and they're great, I really should have done it sooner because the standard cantilever brakes are almost dangerous in comparison. I did have to slightly modify my front mudguard for the front brake to fit:

I just cut out a small opening for the top bit to fit through. The mudguard is still solid and the brake can move freely.

    These are the brakes I used - http://www.tredz.co.uk/.Genetic-Mini-V- ... =Froogle01

    And I bought some adjustable noodles as well - http://www.sjscycles.co.uk/tektro-tektr ... prod18060/

Cost about £28 in parts and shipping, and it's a well recommended modification.
