Well that's the funny thing with Pancetta it is so thin that once you take it away from the pan it starts to go rigid and so that nasty bouncy rubbery feeling of eating fatty bacon is negated.
I do agree it does look floppy and uncrisp.
But as an alternative to Danish try Pancetta and I quote from a possible Bacon Bible( other worth while doctrine books available)

Bacon is awesome. So is Pancetta, but like bacon, you have to ensure it's good quality.
I like my bacon well done, but not quite snappable. However I do have it cooked to snappable consistency if I'm letting it go cold and having it later inserted into a cheese sandwich.0 -

Well this has run, and I think Lawman should acknowledge that this level of support for bacons means that he is most definately in the wrong, greggs pasty and chips and a yum yum is a fine meal, but not for breakfast when there is such a beautiful array of pork based products available, with bacon being the king

i'm amazed by how i survived frankly i'm not suprised by the hatred of non-bacon eaters, wouldnt be the crudcatcher if there was no hatred0 -
