What to eat and drink?

Hi, I am pretty new to cycling and I have been commuting to work for the past year. The distance is only 10 miles there and 10 miles back.
I am going to do the Dunwich Dynamo this year in July and just wanted to seek some advice on what type of food and drink I should bring fo rthe 120 miles ride.
I have done the odd 30 and 50 miles ride where I just brought along water, banana and cereal bars. Because the rides are relatively short, I never had the need to take energy bars, gels or fluid supplements.
Any advices would be deeply appreciated. Just for your information, I shall be taking along a Carradice SQR Tour which has a capacity of 16 litres. I am hoping I don't need to carry a fridge in there
