I can thoroughly recommend http://www.bicycle-holidays.com/index_de.php in Majorca
I was going to use Pro Cycle hire at Port Pollenca, but Max Hurzeler had a shop 5 mins from my hotel at C'an Picafort.
Was allowed out for a half day and managed 111km, and the climb up to Sant Salvador.
Thoroughly good training route
The only thing I would recommend is stopping if you bottle is half full when you can, or learn to carry an extra bottle in your jersey. I went through two large bottles One water one electrolyte... they didn't seem to have any random shops or petrol stations and consequently had my first ever experience of trying to pedal whilst the road was blurry....
