Don't really feel much difference at 180mm, but the front felt really heavy.

I would imagine that out at 180mm, the HA is probably slacker than a lot of DH bikes, which will be why steering felt sloppy.
Like you already said, just run them at 140mm.
As a fellow bop owner running at 140mm I can assure you that it's plenty.
Nice looking build, well done on the forks and any other free bits you got, enjoy your ride!
