Getting fitter

I am new to cycling and I am attempting to improve my fitness at present as well as hoping to lose a bit of weight, I am currently managing to fit in two rides a week with total distance varying between 60 to 80miles depending on how much time I have. any suggestions on what I could do different in an attempt to achieve both.

For fitness purposes, that should be fine. You could try to do 3 days/week which would be perfect for a new rider. Just remember that distance won't matter much if you do it at 5mph so try to push yourself every ride and you'll notice the effects soon.0

I am just getting back into training after a nasty sinus infection, and my knees can't take the pavement punding anymore (save it for skiing). Make sure you try to take the qualitative nature out and get some quantative data.
1/ Get a heart rate monitor, so you can see the effort you are putting in and utilising your cardio system.
2/ Get yourself a cycling computer
That way you'll be able to set yourself targets and maybe combine interval training with sprints etc0
