Turbo trainer/bike setup

Advice on this greatly appreciated. I've just got my first turbo trainer (after years of resistance - get it! :) )

My bike is a 105 10 spd, but I have a brand new Shimano 8spd wheel/cassette gathering dust in my shed. Can I use this wheel on the turbo? The trainer has a bar mounted resistance lever so will I be ok as long as I don't touch the gears?

But how will your 8 speed casette work with your 10 speed chain and STI shifters?

Can't you just put a 10-spd cassette on the wheel? Think the freehub body is the same size for 8/9/10-spd.

A 10-spd chain is too narrow for an 8-spd cassette, so don't think it will work.
