Hi there, I'm looking to start racing this year. I'm at grass roots level and was wondering what kind of training I need to do to compete. Now I'm not looking to win just not to come last so middle of the road. I've a great bike (Klein Attitude) so I got that part right so now all I need to do is get fit. I'm 32 years old and I'm not in bad knick. Could you advise on diet aswell.

Just do it. You'll soon know how much training you need to do.
Depending on if you race in Masters or Fun categories, a good rule of thumb is you should be able to hold a good pace over all terrain for at least 2 hours. (Fun is probably only a couple of laps).
Unless you are very talented you will probably be surprised at the pace of the other guys, so dont be put off, just look at it as a learning curve.<font size="1"> Streako </font id="size1">
