I havn't changed my diet or number of miles ridden per week a huge amount since the summer months, yet have put on 2kg. Is this a simple matter of not sweating as much on rides?

I doubt it. Wouldn't that suggest you were permanently dehydrated in the summer months? (I know it's said that many people are not generally adequately hydrated......... but 2kg of water = 2 litres which seems a lot of fluid to be short on.)
Are the miles you do in winter just as fast/hard as your summer miles or does the intensity of your riding drop? The number of miles covered does not tell the whole story of how hard you're working.

I always thought that winter training should be longer but lower intensity miles than summer? Are you supposed to do longer miles but at the same intensity as summer riding?
Still for some reason everyone puts on weight over the winter - I know I have a it but am working hard to lose then maintain for the winter with a mix of good eating - enough for long rides - good rest and as much riding as I can get in.

The intensity of the rides have been the same as in the summer but I've perhaps done less miles. I just wouldn't have thought I have dropped off to such an extent that I would gain 2kg in such a short space of time.0
