Setting up my Pace RC39 forks and Manitou SPV

Hey.
Just had a new bike built on a new Giant Anthem frame using my reasonably new Pace RC39 forks but have to admit i'm not sure how to set them up correctly!!.. Doh!!
They were set up for me by my local bike shop which i must admit i usualy do with forks but feel i must learn how to do it myself!!
Could anyone guide me through the process of setting up my forks from setting sag, pumping air in relative to my weight(i have a shock pump), setting rebound and fast and slow compression etc.
I realise this is a tall order so if anybody knows a site that can explain it all to me then that would be great....
Apart from the Pace website because that's crap!
Also any advice on setting up my Manitou S-type SR SPV rear shock would be greatly appreciated!..

Air shock? put some air in the red valve according to the manual between the upper and lower limits. then add air to the black valve antill the sag is at the correct/desired setting.
