They are just different alloys of aluminium, its all about the properties of the aluminium alloy, how strong, ductile etc etc. What it really affects is how the frame is welded and how it can be butted and hydroformed, some materials will need slightly different construction techniques to get the most out of the material.
In reality, it means nothing to most people so I wouldn't worry about it. I certainly never think about it when buying a frame. As long as the frame comes from a reputable frame builder then you can be confident that the combinations of materials and construction are correct so you just need to select a frame that suits your style of riding.
