FAO Saz Re: Flapjacks

Everyone will say I should email you but once the post has been read I'm sure everyone will be interested![:D]
Right, I've made a couple of sets of flapjacks now and although the taste and consistency have been satisfactory, they have been too crumbly. So my first thought is that they've been cooked for too long. However, that's not the case as I've tried sets at 18,20 and 25 mins on 150 and it still happens.[:(]
The 25 mins set were crumbly as they were too hard and the 18 mins set were crumbly as they were too soft. The 18 mins set tasted better as they were a bit gooey but they still didn't hold together.[:(!]
Now I may have identified the problem as I don't have any treacle but I would have thought extra golden syrup would do the trick. However, it would appear that the binding agent is at fault.
Any ideas as to what the problem might be?!

Why ask Saz when you can get advice from the recognised "Master of Flapjacks"???
An extra 25g of butter will do the trick. [;)]

Nah, more syrup. Do you leave them long enough to set after you take them out? I always leave mine overnight.

I left the first set (25mins) overnight but I didn't leave the second set (20mins) overnight but I left them for a good 5 hours or so. Maybe that wasn't long enough. I'll try ever more extra syrup too - or maybe I'll just buy some treacle! [:P]
Maybe I'll try the extra butter too - cheers Capt. Concussion.
It's not like any riding buddies are complaining but it does mean you leave half the flapjack along bits of the trail coz it just falls apart. Look at me being bad for the environment!

Lst time I made them, I just threw the whole block of butter in, along with extra syrup, extra treacle and extra sultanas.
Seemed to do the trick, as they were very well received! [;)][:p]

He he! I think the guys I ride with are actually sick to the back teeth of my flapjacks. I'll have to find an alternative. Liking the look of that Marathon Cake in the latest issue actually.

Am almost embarrased to say that in the (almost) four weeks that I've owned it, I've managed out only twice!! [:I]
Mind you, Glentress and Dalbeattie are as damned near good as "twice" gets! [}:)][:D]
I LOVE it - The control, solidity, comfort and the fact that I find myself tackling stuff that I never ever did on my HT..... should have gone full-suss years ago. [:I][:o)]

Yeah, I do that now. Whole block of butter, double the syrup, wee bit more treacle and 400g oats and a big handful of sultanas. Oh, try letting the syrup mix bubble just a wee bit before you add the oats. That makes them more toffee like so should help.

OOOOOH....I love brownies. Put your recipe in the FAQ bit!! I keep meaning to try the brownie recipe in the Green and Blacks book, but have never got round to it. Mostly fear of calories though!!

how about a WMB flapjack competition. All those who want to enter put their names forward, all taste testers put their name forward. Competitors send send out small samples on the same day, taste testers might need to make small contribution via paypal or something, then we have some voting system and the flapjack monarch can be crowned.
Hopefully, not only jocks will enter.

Rather than just flapjacks, could we do a WMB snack/biscuit competition as my flapjacks are rubbish but I make a mean shortbread and brownies. [:D]

Pies aren't necessarily the easiest of gastronomic products to make, unless you're an expert pastry chef with ready access to very good stock or have low standards and are used to substandard pies.
I'm sure your brownies are lovely though. [;)]
