To remove the cassette you need a chain tool as well. You sure its a cassette, and not a freewheel? If its a free wheel, then heave!

<b>Removing a cassette from a freehub</b>
ASSUMPTION: I'll assume you have a 8 or 9-speed cassette on a splined freehub.
Sheldon Brown's hub page will explain if necessary. If you have a threaded hub you may be able to use your BMX freewheel, but that is beyind the scope of my knowledge.
To remove your cassette you need a tool to loosen the lock-ring. As you have pointed out, the casette will turn freely when you try to loosen it, so you need a chain whip as well. This holds onto the cassette while you attack the lock-ring.
Once you have the lock-ring off the cassette should slip straight off.
<b>Converting a freehub to singlespeed</b>
Here's what I did and, no, I do not work for OnOne.
I bought a OnOne freehub singlespeed converter. This comprises two spacers and a cog which go onto your freehub in place of the cassette. Like the cassette they're held on by a lock-ring.
If you have vertical drop-outs (it's a mountain bike, right?) you need a way of tensioning the chain. I went with OnOne again, their Doofer keeps my chain tight. You might want to consult Sheldon Brown's singlespeed page for more options.
The other thing you'll want to do is remove the large and small rings from your crank. You can do this with an allen key. You need shallower crank bolts to go down to a single ring (the ones on a triple set-up are long enough for the middle and big rings) - your LBS will provide.
See my sig for my Giant Boulder singlespeed. Good luck.

If you have an old 5,6 or 7 spd wheel kicking around can you take off the freewheel and stick on a bmx style one, and what should i buy. I've been trying to find the answer to this for ages. Mainly because i have an old wheel at home.

Sheldon Brown suggests that BMX hubs have standard freewheel threads:
<i>"A single-speed (BMX) freewheel is a modular unit, consisting of a single sprocket and its associated freewheel (coasting) mechanism. These have standard 1.37" x 24 tpi threads, and fit on any hub that takes a thread-on freewheel."</i>
That would suggest that the answer to your question is yes. Take your wheel to a BMX shop...

I still think we need to find out whether its a freehub or block he is using. If the latter, no chainwhip needed: the freewheel mechanism is integrated into the cogs. Suffice to say you can't awap between the two systems. Its the fact you said 'old bike' which leads me to believe you have a screw on block.

haha ok, the bmx might be goin on ebay soon, its not in the best of condition and will need some money spent! but if your just after a part i will see what i can do :P
will the chain from the bmx be ok to put on the bike ? (looking to spend as little as possible and recycle as much as possible !!! just gonna be my bike for uni)

If it is a single speed i think so, if it is long enough. Just check the links match up to the new sprocket. However you might want a new chain so it doesn't slip like f**k on your new parts.
