Salsa are quite a fan of using what they call 1x9. I think I am too, although I haven't looked into what effect the chain line would have over a prolonged period it has to be said 1x9 if possible has to be a good half way decision.

i use a 32 and a 12-27 cassette and have never had a problem getting up any hills i've tried riding up. I would imagine that 36 and 11-34 would be fine.

The lowest gear on most cross bikes is 36/25 or 36/27. They generally reckon that if you need anything lower it's probably quicker to pick the bike up and run with it!
The lowest gear on my road bike is 39x25. I've never not got up a hill with it; but then again I never tried to ride it up a muddy slope!0 -
Taking a bike around somewhere like Wharncliffe will need a huge range of gears. 36/34 you wouldn't have a prayer on some of the climbs. Really does depend on your riding.

ive got 38x12-27 on my bighit which is hilarious on steep climbs........ 24" wheel gears it down a bit tho

trust me, 36tooth with those ratios at the back will be fine.
u might have to grind out some hills or get out the saddle where you might previously have spun the gear, but u will get there eventually.
im running 34tooth atm which is fine for all but the steepest crap. imo it is actually better on technical uphills, but worse on the long, smooth and steep climbs.

I run a 36t and 11-34 and ride Wharney (good for the legs) 36t is fine for most trails/hills.
Sonic is right about Wharney there a some really steep hills. I can just manage to get to the Top Gate before I have to stop, which is not bad without a granny ring. Yes I'm getting fitter, thanks to Wharney's hills.
A smaller front ring and you stand a good chance of running out of gears, I know, I've tried it.
I also run a twin ring 36t/24t with 11-34 rear on my Enduro for all mountain/XC which for me covers all ratios I need.

Depends on what riding style and if you find yourself using the granny ring alot. I assume you're into XC and if that's the case then I personally would keep the granny ring on incase I ever needed it. I was running a 24/36t dual rings with 11-34 casette and now i'm running it 1x9 but I don't do any XC at all now really. If I did then i'd have kept it, but when we're downhilling or freeriding we always push to the top and roll down [:D] And dirt jumping I don't pedal too much either.
