I only eat the middle bit as a means to getting to the skin.

theres nothing wrong with eating the potatoe skin, iirc its full of fibre and really quite good for you.

also tastes good with cheese.

I prefer the actual food that comes within the skins.
Potato skins, along with chicken wings, have got to be some of the biggest scams going! People pay good money for chicken wings with less than a full bite of meat on!

I thought the skin was the most nutritious part of a baked potato, that's right isnt it?

Its also the best part, if its nice and crispy. I usually cook them in the Microwave for 10 minutes, and then cover them in olive oil and salt and put them in the oven for 30-60 minutes. Cut it open, chuck a big chunk of margarine in the middle...I'm off to cook some potato's!
