Isn't one of the reasons they weigh and put weight restrictions on luggage, so that they know how heavy the plane will be therefore knowing how much fuel to put in the plane... etc

So by conning them on the weight of your luggage, you could just be old mans stamp collectioning up theor calculations and stuff?

a couple of kilo's wont make that much difference anyway because they will have to have some le-way in their calculations anyway

No, the planes are refuelled while you are checking in. They will base fuel on the maximum allowed luggage per passenger: e.g. 50kg per person. Fat people add weight, but they don't weigh you, so they can't add that into fuel calculations...

They tend to put enough excess fuel on board to fly a fair bit extra. in case they get diverted.

That is 4 years old, im pretty sure easyjet bike policy has changed more than once since then.
