has anybody successfully built a gentoo system from a stage3?

I've currently got further than i've ever got before, set the kernel compiling hours ago, then went for a bike ride, came back, and it is still bloody going!
I <i>think</i> it's still going, rather than stalled, because i pressed enter on its terminal window and it line-fed whereas if it's stalled it normally fails to do that... so fingers crossed! i'll be very impressed if I get it to bootable state, as I've heard it's the hardest linux to set up but the best in terms of performance.

How much experience do you have with Linux?

a bit. I know the basics... hmm, it seems to have been on the same operation
" LD drivers/video/built-in.o" for hours. So I stopped it.
Will set it going again...

I'd certainly suggest getting used to compiling kernels (and kernels not compiling) under other distros before trying Gentoo. Not that I've ever had a go, but I've spent long enough on forums to see that people use Gentoo more for the fun of getting it going than anything special once it's up.
