I don't live in the alps. Therefore double.

When I lived in your part of the world, I used 56/44 with a 12-17 6 speed block without any problems. Then I moved to Wales......Now run 53/39 with a 12-21 8 speed Cassette.
When's the Forum Roadie ride going to take place? I really need to get mine back up to Uber-Tart-Spec again....

Yes, but you don't live in a flat part of the country and do uber-climbs every day. [:D]
TBH, I don't think I've used the granny ring on the commuter.

If/when the drivetrain goes "pphhfftt" i'll put tiagra/ultegra on it, unless i see some dura ace very cheap.
Bartape might change, bars probably won't change.

I could get away with using the middle ring up the big hill, but that wouldn't be spinning legs at all. I've seen people do it with double rings and it's not pretty.

They have little horns and were borne from the minds of infernal powers! They're forged from pure brimstone in the sulpherous fires of hell! Hatred in impiety brazed on with each circle they progress through until they're anointed in the blood of babies until an inverted cross wrapped in the entrails of saints!
Or so I've heard.
