I could ride my trials bike with no star nut or head-lock so long as I keep an eye on the stem clamp bolts, yes?

The stem clamp bolts won't come loose. The star nut is only there to tension the bearings, once you clamp the bolts you can remove the star nut. I wouldn't, but hey.0

I've tightened my headset with a G-clamp before. It works fine but then I do have DC forks which hold things together better.

It's fine, I ran my jump bike like it for ages, the only problem arises if you crash and twist the bars, as you can't straighten them without loosing the tension in the headset, meaning you have to carry the bolt, cap and a 5mm with you if you are any distance from home

I dont have anything to tension them with in the first place. My Ed'lock isnt long enough for the new frame and forks with the desired stack height.

Almost. I cut the steerer a couple of millimetres shy of the top of the stem. But yes, the bore of the stem still isn't that nice to mesh with.

Y'know that plastic POS mbuk supplied in place of the stem cap? Go use it. At very least it'll fill the hole.
