I'm going to buy my first bike next week, what sort of setting-up will the shop (De Ver Cycles - Streatham) do for me?
Seat/handlebar height adjustment.
Set-up the shocks for my weight/riding style.
Anything else? How long will all this take?

What else will the store offer? I've heard people mention free services, is this something all stores do and what does it usually entail?

At the very least seat/bar adjustment. Should let you try different stems, but not all do (they can't take one out of stock, so they have to be prepared for it).
Shocks should be set up for you, too.

Free service is required for warranty for all the major brands - it's a readjustment to take account of things (bearings, cables, bolts) bedding in. Entails you returning the bike to the shop after a month or so for it to be tweaked. Most will do as-close-as-possible-to-on-the-spot readjustments in the meantime, too.
