Starting again kit

Hi all.
Before TLDR need some help advice mainly in
What gloves , I do suffer from cold hands , but good dexterity I'll imagine I need a few pairs, winter weight and for milder conditions.
What's a good seat post mounted saddle pack/bag I think between 5-15l small rucksack size for at most shirt, trousers, sandwiches , towel phone wet weather gear, change of underwear and maybe an extra layer just in case.
I only have 7 mile each way commute all tarmac some road some cycle path/off road but tarmac.
I work as a postie so be back out being active walking outside once I've ridden in. I know lots of posture just rude in their uniform.
I've had my bike along with all my old kit nicked so I'm starting again , but lighter and condensed down.
I've just got my replacement bike, Giant Defy advance pro, so ditched the rack and looking to only carry bare essentials in a saddle bag/pack.
Wheels/tyres set up tubeless, what do I really need?

I have the planet X Carnac Ultimate, which are good for all but the very coldest days (described as mid weight winter gloves) and on sale for £8 at the moment. Get used down to zero degrees or thereabouts (I don't suffer with cold hand especially though)
For really cold/wet weather (sub zero, i was doing 20 mile year round commute at 6am) i have the proper winter Carnac gloves (carnac ultimate waterproof i think) but I don't think they do them anymore. They do the lobster version if you can get on with them.0 -

Just look at the size measurements, for example I have the XL reflective lobsters which are great for sub zero days, but "folding creases" of my wrist to end of middle finger is ~200mm. Ordinarily I'm a medium for most gloves.
