Hi, I have recently bought a nice specialized Allez aluminium frame with Sora groupset. Can someone advise what would be a good set of wheels to upgrade the axis stock wheel. Looking to mainly use for winter training

For winter training I'd probably stick with the wheels that you have until they're knackered.1

Tyres are usually a trade-off between durability and performance. The Espoirs are mileage tyres, rather than performance tyres, but that doesn't necessarily mean they won't handle in the wet.0 -
Agreed on the wheels, don't spend your money on replacing them.
Although tyres are a wear item I'd be more inclined to change them. Winter riding is grim enough to endure already, may as well get some grippy, supple, relatively puncture resistant tyres to make things a bit enjoyable.
