Shimano parts wanted

in Workshop
I'm putting together a turbo trainer bike and need a few bits, shimano 105 or ultegra.
Chain set double 10/ 11 speed. 50/34 or 52/36
Shifters 10/11 speed
Saddle prefer a Fizik Aliante gamma medium width
Items need to be reasonable condition not end of life tat. Let me know age and use if responding.

    I know MF has some strong opinions on Ultegra but what's wrong with Claris or Sora on the turbo?
