Tyre recommendations

I've picked up a S/H NOS CX frame, and am building it up with a mix of new and old parts. I was after some advice on tyres for general hacking it around in my nearby woods, towpaths, bridleways. Nothing too technical, think frame could handle a max of 38mm. Tubeless ideally.

Also - could I use 35-38mm tyres on 17mm (inner) rims? I know it's not ideal, but needs must.
