Hydraulic brakes for Gravel/Adventure bike

Any recommendations for some good value brakes? Have been looking at Clarks M2 or M3 which seem terrific value but reviews for the M2 especially say that stopping power isn't great. I've got Deores on my Marin trail bike which are great but I won't be doing anything especially gnarly or fast on the gravel bike so perhaps don't need to spend the extra.

Thanks

    Drop bars or flat bars?

For gravel/adventure bike with flat bars have a look at Clarks equivalent Shimano MT500's with servo wave levers.

Similar price and good value with slightly better power, more than enough for a gravel bike on average trails.
