Tyre swap - Giant explorer ebike

Hi all.
So after 2 serious back operations and 2 years out of the saddle I decided to hang the gravel bike up and get an electric bike to get fitness up and reduce the strain on my lower back.
Went for a Giant Explorer e+2 which is great. Went from 8 miles first day then up to 20., really enjoying it.
The question I have though is that the bike currently has 700x45 giant cross cut tyres but I think for commuting a skinner smoother tyre like a gator skin maybe 28 or 32 would be great. It would give longer range and make the bike faster at the top end with less rolling resistance.
The wheels are ex-2. Does anyone know what type of tyre and sizes I can go down too?
