8 Speed Shimano Claris set-up ... can I get to 9 or 10 speed?

Hi,
Road bike newbie help please! I have done a quick search and couldn’t find a clear answer so feel free me to point me at it if it’s already been done.
I have a Giant Contend 2 with the Shimano Claris groupset and want to move to a 9 or 10 speed to help with my Zwift training.
Can I do either by only changing the cassette?

No. As per your turbo thread - and any quick Google would show - you need to change the shifter 'cos that's the brains of the system. Mechs are pretty dumb so as long as they are the same make as the shifter you're in with a good shout of them working together. Just don't mention 10s Tiagra!1
