Not tried it, but yes of course you can (assuming it’s a disc brake), you’ll have a BB circa 1/2” lower is all.
Current steed - Whyte T129, 2013 frame, mongrel Revelations, Giant dropper, Stans S1 wheelset. 12, Magura Trail Sport brakes, 1x11. 12.8Kg

Wheels are part of your gearing from pedal to road, and because the wheel diameter is now slightly smaller, you will have a slightly reduced top speed, but you will get there quicker!

Perhaps 26" wheel but with a big fat tyre on it? (if it'd clear the frame).
Just an idle thought, i do kinda think it'd be cool though.
