Tyre suggestions size and style

Hi folks, I'm new to this forum and was looking to ask for some advice as I am being overwhelmed with options.
I currently have a croix de fer 30 2016 model and was wondering what the biggest tyre size I can fit onto it, I am happy to remove the mudguards if this offers extra clearance.
We are heading to Peru to Argentina in April to do some bike touring (roughly a 4 month trip). What tyres would people suggest for this style of trip?

You need a minimum clearance of 5mm either side of the tyre, so measure the width in the frame/fork where the tyre is and deduct 10mm.Now where's that "Get Out of Crash Free Card"0
