What bike do I need

Hi all, first post, long time lurker (old forums would never let me log in!)
I commute a couple of miles each way to work over a mixture of road (½ mile), gravel (1 mile) and wagon way (1 mile) which could be gravel or tarmac as both paths run parallel. Occasionally I take a more scenic route home which is dirt, short forest section with tree roots, mud etc.
At the moment I ride an old (2001) carrera kraken MTB that I’ve adapted to have hydraulic disc brake, alivio shifters and cassette, sram chain and Schwalbe land cruiser tyres 26x1.95. All in it’s barely cost me £100 including the bike cost and rides really well for what it is. I’ve completely stripped and rebuilt it.
I rode a full sus MTB at the weekend and loved the ride, it would be great for my scenic route but not so much the rest. I could get a rear shock lock out and fit semi slick tyres but then am I compromising it for muddy bits?
I’ve never rode a ‘premium’ bike.
I’m a complete novice with bikes, quite technically minded so happy to modify something to suit my needs (as I’ve already done) but given I’m being hit with the old N+1 syndrome is love to know what bike would you suggest I consider? Budget under £1000. I like the looks of the Calibre Bossnut...
