My wife currently rides a Boardman hardtail (must be over 15 years old). But is now after something a bit more comfortable. We do a fair bit of trail riding (Yorkshire Dales, Hamsterly, Dalby, etc) but she wouldn't do anything like a red run (not without getting off and walking through the obstacles, anyhow).

Our budget is ~£2K, I don't think it would be worth spending much more than that.

Any advice as to a bike in that range?

Plenty of choice with that budget.
Based on personal experience have a look at Giant Anthem / Trance / Liv Pique.
Check places like Paul’s Cycles, Rutland and Pedal On for discounted models.
