I'm replacing the crankset on my wife's bike from el-cheapo chinese set to Shimano RS500. The old one had an O ring on the left hand side but not on the right. Do the Shimano cranks need any O rings?

I doubt it, but google Shimano tech docs for your chainset and see. Actually the instructions that come with it should tell you.

    "o" ring or wavey washer?

either way, the new crank will have everything you need in the box
