Could I run a 30t cassette with a Campagnolo Veloce 10 speed short cage rear mech and a 50-34 chainset?

Just but a miche 13-30t would be needed to maintain chain tension in all gears. your stretching the limits of the rd.The short cage rd will just clear a 30t cog. It will work but expect some noise in 30t cog and that the shifting would be better with a medium cage.http://www.thecycleclinic.co.uk -wheel building and other stuff.0

Yes. Make sure your chain is long enough in big sprocket and big chainring. Avoid using small sprockets and small chainring. If you do you might have a droopy chain but that does not cause a problem. You have similar gear ratios with big chainring so there is no need to use small/small.0 -
Yes. I did exactly that on my Zullo for a while. Chain tension in small-small was indeed marginal, but I never use that ratio anyway.0
